Looking for a make to take you through the hump day? Look no further than this recipe for cheesy crackers.

Time 1hr 30mins

Makes 1-2 dozen depending on size

 

Ingredients: 

125g/4 ½oz cheddar cheese, grated

¼ tsp salt

75g/3oz plain flour

¼ tsp cayenne pepper

60g/2 ½oz butter

25-40g/1-1½ oz Parmesan

Method: 

1. Place the cheese, salt, flour and pepper into a food processor and pulse until a dough forms. Add the butter and pulse again. If the mixture is too dry and won’t come together, add a little water a tablespoon at a time.

2. Take the dough out, form it into a ball and wrap it in clingfilm and chill in the fridge for an hour.

3. Preheat the oven to 350F. Roll the dough out on a piece of greaseproof paper until it is 1/8 inch thick. Use a scone cutter to cut circles or a pizza cutter to cut the dough into squares. Scatter the Parmesan over the top of the crackers.

4. Bake for 10-12 minutes until they are just golden and remove from the oven. Allow to cool, then store in an airtight container.

Tip

These crackers would look great in a cellophane bag with a gingham ribbon. You could add black pepper or paprika in place of the cayenne or why not try a tsp of dried herbs?
