Lunchbox ideas to shake up your week

Constantly shelling out a small fortune for lunch during your working week can add up, but bringing your own home made lunch from home can often lack a bit of imagination and there are only so many ham and cheese sandwiches we can face. But preparing your weekly lunch menu will not only help you save a few euro but will make it easier to stick to your healthy routine too.

Here are a few tasty, healthy and (most importantly) simple lunches to take to work with you this week.

 

Chicken and Avocado Wrap

What you need:

1 chicken breast thinly sliced

Juice of half a lime

Half a tsp of chilli powder

1 chopped garlic clove

1 tsp olive oil

2 wraps

1 avocado halved and stoned

1 red pepper

Chopped coriander

 

How to:

Mix the chicken with the lime juice, chilli powder and garlic.

Heat the oil in a frying pan and fry the chicken for a couple of minutes.

Meanwhile, warm the wraps following the pack instructions or, if you have a gas hob, heat them over the flame to slightly char them. Do not let them dry out or they are difficult to roll.

Squash half an avocado onto each wrap, add the peppers to the pan to warm them through then pile onto the wraps with the chicken, and sprinkle over the coriander. Roll up, cut in half and eat with your fingers.

 

Make enough and it will last a couple of days meaning you have lunch for the first half of the week sorted! Plus, it gives you a break from bread.
