Mackerel salad


Serves 4

Do not freeze

Time 10 minutes

You will need: 

1 lemon, juice and zest

2 tbsp extra-virgin olive oil

1 clove garlic, minced

1 cucumber, chopped

3 tomatoes, chopped

1 tin chickpeas, rinsed

75g/2½oz feta cheese, crumbled

2 tbsp black or green olives, sliced

2 tins mackerel

2 tbsp fresh parsley, chopped finely


  1. Mix the lemon juice and zest, oil and garlic in a large bowl until well combined.
  1. Tip in the cucumber, tomatoes chickpeas, feta and olives. Stir gently and divide over 4 plates and top with mackerel. Garnish with parsley
