Looking for inspiration for lunch for the week ahead? Look no further than this recipe for sweet potato cakes

Sweet potato cakes 

Serves 4 


Time 20 minutes

You will need: 

1 tbsp olive oil

1 medium sweet potato, peeled and chopped

1/2 onion, diced

1 garlic clove, minced

100g/3½oz cooked quinoa

50g/1¾oz breadcrumbs

50g/1¾oz parmesan cheese, finely grated

2 tablespoons chopped fresh basil

1 large egg, lightly beaten



1. Heat 1/2 tablespoon olive oil in a large frying pan and add the sweet potato and onion, season with salt and pepper, cover and cook for 10 minutes until potato is soft. Remove lid and add the garlic and cook, uncovered for another 30 seconds. Set the pan aside.

2. Mash the potatoes in a large bowl then add the quinoa, breadcrumbs, cheese and basil, season and mix well. Add the egg and mix well with your hands. Form into burgers.

3. Return the burgers to the pan and fry for 3 to 4 minutes on either side. Serve with salad.
