Easy dessert | Lemon posset
An easy dessert to make midweek

You will need:
14floz/400ml pouring cream
4oz/110g caster sugar
Juice of 1½ lemons
Method:
1. Place the sugar, cream and vanilla seeds into a large pot and bring this mixture to the boil.
2. Once the mixture comes to the boil whisk in the juice of the three lemons and whisk well.
3. Pour the mixture into cups or glasses and transfer to the fridge to set for at least two hours.
4. In total, depending on the size of your chosen serving container, you should get between four and six servings.
5. Serve with some fresh fruit and some homemade shortbread biscuits flavoured with vanilla.
