Make... Catherine Durran's pumpkin spice and banana slices

I always make a jar of pumpkin spice mix so i can add it to cakes or hot chocolate. There are plenty of healthy perks to eating pumpkin spice. These cake slices taste divine and also the incredible smells of cinnamon and mixed spice throughout the kitchen is amazing. This is the perfect treat to cozy up to as the nights get cooler. 

You will need

For the cake

150g self-rising flour 

1/4 tsp baking powder 

50g brown sugar

50g caster sugar 

50g butter, softened 

1 mashed banana

3 eggs

1 tsp vanilla essence 

For the pumpkin spice 

1 1/2 tsp ground cinnamon 

1/4 tsp ground nutmeg 

1/4 tsp ground ginger 

1/8 tsp ground cloves 

For the creamy butter frosting 

50g butter, softened

150g icing sugar

2-4 tbsp water

2 tsp vanilla essence 

 

Method

Preheat oven to 150°C/300°F/Gas 3.

Using a whisk cream both sugars and butter together until smooth. Then add in the eggs, banana and vanilla essence. In a separate bowl mix the flour, Pumpkin spice and baking powder together. Then using a wooden spoon gradually add the flour mixture. Mix until all the ingredients are well mixed together and there should be no lumps.

Spoon the mixture onto a square baking tray.

Cook for 30 to 35 minutes, until golden brown.

Once cooked put the cake onto a wire tray to cool down. Add the frosting and cut into slices.

For the frosting 

Cream the butter and sugar together then add the rest of the ingredients and whisk until smooth.

Optional toppings

Roasted pumpkin seeds, chopped Walnuts, fudge pieces or chocolate chips
