Fruit Crumble with Banana and Peanut Butter Cup Ice-cream

 

Ingredients needed….

 For the crumble

  •  1 cup of ground almonds (100g)

  • 1 cup of oats (100G)                       

  • ½ cup of flaked almonds (50g)

 Method

Stir together.

 Melt 2 TBL coconut oil + 4 TBL maple syrup and 1 TBL cinnamon

 Add to crumble mixture and mix well

 Fruit

 Roughly chop 750g of fruit, I did 250g mango and 500g strawberries.

 Place in the bottom of a 20 cm (8 inch) pie dish

 Top with the crumble mixture

 Bake in a preheated oven ( 180 ) for 25/30 minutes till golden brown

 

Method

Ice cream

  •  Put 5 chopped and frozen bananas into a flood blender, leave for 10-15 minutes.

  • While waiting roughly chop 2 packets of supernature peanut butter cups ( or 3 if you love them as much as me lol).

  • Blend the banana till it turns white and creamy, blend or stir in the peanut butter cups ( I like to leave a little bit chunky )and serve with the crumble.

 

I picked this recipe because it is so full of natural ingredients and so easy to make, leftovers can be eaten hot or cold for breakfast the next day which is what usually happens when my husband is around if by some chance there are leftovers lol.

 

You can choose any fruit combinations you like, the fruits I like to use for it are

 

Pear ( peeled)

Plum (peel if prefer)

Mango

Strawberry

Blackberry

Raspberry

Banana

 

So basically anything you have in your house that’s nice and ripe ( more the soft fruits). So a dessert that has 3 of your 5 a day, you can also make individual ones really easy and then everyone can choose their own fruit for the bottom. Use gluten free oats for the coeliac friendly option and as you can see it is free from dairy and refined sugar so vegan friendly also.
