Make... Ballynahinch Castle and Estate Brown Soda Bread
You will need
· 225g plain sift flour
· 450g wholemeal flour
· 500ml buttermilk
· ½ tsp bread soda (separate in a jug)
· 1½ tsp caster sugar
· ½ tsp sea salt
· 100g melted butter
· Handful of porridge oats for the top
Method
1. Keeping your bread soda separate.
2. Combine all your dry ingredients together into a large bowl, (or basin) and thoroughly mix, making a well
3. Gradually add your buttermilk to your bread soda, and whisk slightly, this activates your soda.
4. Now add your activated buttermilk and bread soda into your well, stirring with your hands.
5. Brush you tin with a vegetable oil, this lines your tin making the finished product should pop out (parchment paper cut prior to mixing works great too).
6. Place your mix into your greased bread tins.
7. Sprinkle porridge oats over.
8. Bake in your preheated oven at 165 degrees for 60 mins.
9. Using a cloth or oven gloves remove the bread loaf from the tin and place back in the oven.
10. Turn the oven up to 180degrees to carry on cooking for a further 15 to 20 minutes.
11. Take out of the tin and tap the bottom if there is a hollow sound the bread is done.
12. Makes two breads in 1 lb tins.
