Recipe: Steamed pudding

Steamed chocolate and orange pudding with chocolate sauce

For the pudding
Butter, for greasing
175g/6oz butter, softened
175g/6oz caster sugar
Grated zest of 1 orange
3 eggs
175g/6oz self raising flour, sifted
50g/2oz chocolate chips
For the chocolate sauce
225ml/8fl oz pouring cream
4oz/110g dark chocolate, chopped
Method
1. Preheat the oven to 180˚C/350˚F/Gas Mark 4. Lightly grease six mini pudding basins with some melted butter. In a large mixing bowl, cream the butter and sugar together with the orange zest until light and fluffy. This should take 3-4 minutes. Add in the eggs and mix completely.
2. Add the flour mix into the mixing bowl with the butter and eggs and mix until completely smooth. Fold in the chocolate chips at this stage.
3. Divide between the prepared pudding basins and then place the basins in a deep roasting tray (½ filled with water). Cover the pudding basins with a layer of parchment paper and a layer of tin foil, using the tin foil to cover and seal the entire tray.
4. Transfer to the preheated oven and cook for 45minutes–one hour or until a skewer inserted in the centre comes out clean. Invert the puddings onto a serving platter and serve with some chocolate sauce and whipped cream.
