How to make... Flahavan's Strawberry Oat Muffins

This year we've a 'Back to School' like never before so to make the transition easier for parents and kids alike, Flahavan’s has teamed up with Lili Forberg to create some lunch-box fillers and post-school snacks. Here’s the recipe for her strawberry oat muffins.

Makes 12

 

You will need

1 cup or 150g self-raising flour

1 cup or 100g Flahavan’s Organic Porridge Oats

1 tsp baking soda

1 tsp baking powder

1/3 cup or 80ml olive oil

1/3 cup or 70g brown sugar

1 egg

1 tsp vanilla essence

1 cup or 250g natural yogurt

1 cup or 170g chopped strawberries

 

Method

1.    Mix all ingredients in one bowl keeping the strawberries until last.

2.    Grease a muffin tray or papers. If you’re using silicone muffin moulds you don’t need to grease them.

3.    Sprinkle some oats on top.

4.    Bake on 180° for 20-22 mins.
